Blueberry Basil Cannabutter Biscuits

Last weekend I made a micro-batch of cannabutter using the stovetop Moka pot method. I ended up with just a few tablespoons of yummy Gelato butter, and I thought consuming it for breakfast would be a great start to the day. I had a couple of leftover biscuits from dinner the night before, and a pint of sweet Florida blueberries hanging out in the fridge. I ended up making this quick & easy dish: crispy biscuits slathered with cannabutter and topped with a perfectly sweet blueberry compote plus a little backyard basil.

The biscuits were not homemade, though you could make biscuits using MORE cannabutter if you’re trying to spend your day chilling on the couch! I prefer to start the day with a low dose of THC and go up from there :) The terpenes in the butter taste amazing with the blueberry/basil combo. I can’t imagine how tasty this dish would be if you made the cannabutter with a strain that had some blueberry genetics. Give this cannabis-infused breakfast dish a try! It’s more of an idea than a “recipe.” Try it with English muffins or thick sourdough toast instead of biscuits, or use whatever fruit you have on hand for the compote.

Blueberry Basil Cannabutter Biscuits (serves 2)

  • 1 pint fresh blueberries, washed
  • 2 TBS raw turbinado sugar
  • 1 TBS water
  • zest of 1 small lemon
  • 2 biscuits
  • 4 TBS (2 oz.) cannabutter, divided
  • A few sprigs of fresh basil

To make the blueberry compote:

Combine blueberries, sugar, and water in a small saucepan over medium heat. Reduce to low once the mixture begins to simmer. Cook for about 10 minutes or until the mixture is thick and syrupy, and the blueberries are broken down. Stir in the lemon zest.

To make the biscuits:

Slice the biscuits open and spread about 1/2 TBS of butter on each half. Heat a cast-iron skillet over medium-high heat. Toast the biscuits in the skillet (butter-side down) until golden-brown and crispy, about 3 minutes. Plate the biscuits and evenly spread the rest of the cannabutter over the biscuits while they are still hot. Spoon some of the blueberry compote on there, garnish with a sprig of basil, and enjoy your yummy stoner breakfast!
